Just wanted to wish everyone who celebrates Easter a blessed day! I also wish those who don't celebrate Easter a blessed day.

Normal routine here of going to church service and meeting at my Mothers for lunch. There will only be a small group of 20 there for lunch since many are out of town or visiting their in laws. Everyone brings different dishes so there is always enough food for a multitude.

I do sometimes miss playing the Easter bunny but the kids do seem to grow up fast. As they grew older their faith in the bunny seemed to renew itself when the rabbit started hiding money inside plastic eggs.

Good day, Pool!

I'm just checking in before going to church solo this year (Manfred is working this morning!) Then the whole gang descends on my house as usual for dinner so I've got a prime rib AND a leg of lamb ready to go in the over as soon as I get home.

Baby potatoes with chives, asparagus, fresh carrots, and bearnaise sauce for the prime rib. Mmmmmm.

My guests better bring the deserts as I instructed!

I miss playing the Easter Bunny as well - even up until last year Matty lived with me so at least I watched D26 hide the eggs. But he came over Friday night and we colored some anyway. The kid is getting very artistic - not just colored eggs, but striped, checked, swirled, and one the he called his "experiment" - he tossed it in every color then wiped. It's the best one - looks tie-die!

Yep. It may be Easter, but it's colder than a bunny's booby here! Brrrrrrr!!!!!!!!

willow, did you guys get hit with that snow storm the other day? I thought of you when I saw the report. Seemed pretty bad.

Have friends staying--they are down from Alaska. She boiled a whole carton of 18 eggs, so it looks like we will be having LOTS of deviled eggs today, and egg salad tomorrow....

The kids are coming for dinner, honey glazed ham, Au gratin potatoes, fresh snap peas and baby onions in a cream sauce and rolls.

Hid D14's easter basket. She'll be very busy trying to find it this year. (The Easter Bunny didn't make it easy to find)

It's sprinkling here....I was hoping for better weather today. I'm expecting 15 for dinner around 4 pm. I hope they don't bring their dogs inside!

It's freezing here.

The kids demanded an egg hunt so I hide them. Hide some of them very hard. But it was fun.

Going to my sister's later. I just have no energy today, didn't have any yesterday either, spent most of the day laying around reading and dozing.

I hate when I feel like that, I have to much to do to have no energy.

Happy Easter to you, Pool, and everyone else!

We are heading out to my sisters this afternoon for ham and all the fixings! My sister makes the ham - the rest of us bring the fixings!! Luckily we are "able" to head out - we have had over 15" of snow over the last two days!! And to think just last Tuesday it was 83 and we were wearing shorts!!

OSP,...friends visiting from Alaska? Who? No-one from Alaska notified me they was leaving!

Yeah, we've been balmy here. In fact we're BBQing for Easter,...easier clean-up.

Tell your friends to look me up OSP.

Does anyone have a recipe for a white bean soup to make with the leftover ham bone from Easter dinner? (I have a great split pea soup recipe, but wanted to try something lighter.) Thanks--

2nd, Sounds like you're lookin' for a standard Pennsylvania Dutch recipe.
I do mine a bit differently than this, but it's close. I don't use potatoes, carrots, or bay leaf. I soaked the beans overnight rather than the 2 minute cook. I'm sure either would work.....even canned navy beans do in a pinch.

Amish Bean Soup

2 cup navy beans, dried

2 1/2 qt water

1 each ham bone (1 1/2 lbs)

1 each garlic, clove, minced

1 each bay leaf

1 cup potatoes, cubed

1 cup celery, thinly sliced

1 cup onion, finely chopped

1 cup carrots, cubed

1 salt and pepper, to taste

Boil the beans in the water for 2 minutes before removing them from the heat to let stand for 1 hour. Then add the ham bone, garlic and bay leaf to the beans, and cover and simmer them for 2 hours or until the ingredients are almost tender. Add the vegetables and salt and pepper to taste, and simmer them for 1 hour longer. Remove the ham bone, cut off the meat and dice it to add to the beans. Reheat the soup almost to boiling, then remove the bay leaf.

The soup was great, Rocky. And as soups are, always better the day after making it. Thanks for the recipe.
